Throughout its long & colourful history, raw cacao (the unprocessed chocolate bean) has been known as the "Food of the Gods". The ancient cultures of Central & South America as well as the early Europeans used cacao in ritual & celebration, for mood elevation, stamina, longevity & even as money! Eventually during the surge of capitalism & the industrial revolution, the
cacao bean was roasted & combined with sugar & milk powder. These factors shifted this food from a revered panacea to a social treat. The consequence of this “progress” is that all of its potent nutritional properties are all but lost - but the tide has turned & knowledge about raw cacao is returning!
